- 6 Cups of Doudlah Farms Organics Tested Clean Popcorn. Popped (About ¼ – ½ C kernels)
- ¼ Cup Organic Almond Butter
- 1/3 Cup Local Honey
- 1/3 Cup Dried Cranberries or other dried fruit-chopped)
- ¼ Cup Chopped Nuts- (almonds, peanuts or pecans)
Instructions
Optional:
- Seasonings: 1 tsp cinnamon, pumpkin spice or vanilla bean seed for extra flavor. Halloween Sprinkles. Sweet: Peanut butters and Dark Chocolate. S’ Mores: Mini Marshmallows, chocolate chips and/or graham cracker pieces. Or Savory Bacon and Cheese or White Chocolate with a Kick of Cayenne.
- Pop the Popcorn. I use Organic Coconut Oil and add sea salt to oil. Ensure all unpopped kernels are removed.
- Heat the “Glue” In a small saucepan, combine the almond butter & honey over medium heat stir continuously until the mixture is smooth and start to simmer. Simmer for a few minutes.
- Combine Ingredients: Pour the popped popcorn not a large bowl. Drizzle warm almond butter mixture over the popcorn and toss well to coat all pieces.
- Add your mix-ins. Gently fold in the dried fruit of choice & nuts. For extra flavor add cinnamon, Pumpkin Spice, or Vanilla extract now.
- Let the mixture cool: Allow the mixture to sit until cool enough to handle. Less than 30 minutes
- Form the balls. Lightly grease your hands with coconut oil. Scoop up portions of the mixture and press firmly to form them into desired size balls. The mixture will be less sticky than a traditional recipe, so PACK THEM TIGHT. Add Sprinkles or fun ingredients.
- Chill to set. I wrap in parchment paper and chill in the refrigerator for 30 minutes. Or use Cupcake liners to set them in & easy to serve.
- Store: Keep the popcorn balls in an airtight container at room temperature for up to 3-4 days or store them refrigerated for longer term freshness.
- Customize your add-ins: Dark Chocolate Chips, Toasted Coconut or pretzels pieces. Mini Marshmallows, graham cracker pieces. Cocoa Powder or Peanut butter powder.
