
Yellow Cornmeal Cake with Lemon Zest

Description
Light, fragrant, and made with Doudlah Organic Yellow Cornmeal for a rustic, golden texture.
Ingredients
¾ cup Doudlah Farms Organic Yellow Cornmeal
¾ cup Doudlah Farms Flynn Creek Whole Wheat Flour
1 tablespoon lemon zest (from about 1 large lemon)
1½ teaspoons baking powder
¼ teaspoon salt
2 large eggs
½ cup organic cane sugar (or honey for a richer flavor)
½ cup whole milk (or plant-based milk)
⅓ cup olive oil or melted butter
1 teaspoon vanilla extract
Optional: powdered sugar for dusting, honey or lemon glaze for drizzle
Instructions
- Preheat Oven
Set oven to 350°F (175°C). Grease an 8-inch round or square baking dish and line with parchment paper for easy removal. - Mix Dry Ingredients
In a large bowl, whisk together cornmeal, flour, baking powder, salt, and lemon zest. - Combine Wet Ingredients
In another bowl, whisk eggs, sugar, milk, olive oil, and vanilla until smooth and slightly frothy. - Mix & Pour
Add the wet ingredients to the dry mixture. Stir just until combined—do not overmix. - Bake
Pour batter into prepared pan. Bake for 25–30 minutes or until golden and a toothpick inserted in the center comes out clean. - Cool & Serve
Let cool for 10 minutes before slicing. Dust with powdered sugar or drizzle with a lemon glaze for extra brightness.
