Yellow Cornmeal Cake with Lemon Zest

Description

Light, fragrant, and made with Doudlah Organic Yellow Cornmeal for a rustic, golden texture.


Ingredients

¾ cup Doudlah Farms Organic Yellow Cornmeal

¾ cup Doudlah Farms Flynn Creek Whole Wheat Flour

1 tablespoon lemon zest (from about 1 large lemon)

1½ teaspoons baking powder

¼ teaspoon salt

2 large eggs

½ cup organic cane sugar (or honey for a richer flavor)

½ cup whole milk (or plant-based milk)

⅓ cup olive oil or melted butter

1 teaspoon vanilla extract

Optional: powdered sugar for dusting, honey or lemon glaze for drizzle


Instructions

  1. Preheat Oven
    Set oven to 350°F (175°C). Grease an 8-inch round or square baking dish and line with parchment paper for easy removal.
  2. Mix Dry Ingredients
    In a large bowl, whisk together cornmeal, flour, baking powder, salt, and lemon zest.
  3. Combine Wet Ingredients
    In another bowl, whisk eggs, sugar, milk, olive oil, and vanilla until smooth and slightly frothy.
  4. Mix & Pour
    Add the wet ingredients to the dry mixture. Stir just until combined—do not overmix.
  5. Bake
    Pour batter into prepared pan. Bake for 25–30 minutes or until golden and a toothpick inserted in the center comes out clean.
  6. Cool & Serve
    Let cool for 10 minutes before slicing. Dust with powdered sugar or drizzle with a lemon glaze for extra brightness.
