Thanksgiving Sides Prep: Great Northern Bean Mash with Garlic

- 2 cups cooked Doudlah Farms Great Northern beans (or 1 cup dried beans, soaked overnight and cooked until tender)
- 1 small head of garlic
- 3 Tbsp extra virgin olive oil, divided
- ½ cup vegetable or chicken stock (warm)
- 2 Tbsp unsalted butter (optional, for extra richness)
- Juice of ½ lemon
- Salt and freshly ground black pepper, to taste
- Fresh herbs (parsley, thyme, or chives) for garnish
Instructions
- Cook the Beans (if using dried):
If starting with dried Doudlah Farms beans, rinse and soak overnight. Drain, then simmer in fresh water until tender (about 1 to 1½ hours). Drain and set aside. - Roast the Garlic:
Preheat oven to 400°F. Slice the top off the garlic head, drizzle with 1 Tbsp olive oil, wrap in foil, and roast for 30–35 minutes until soft and caramelized. Let cool slightly, then squeeze out the cloves. - Blend the Mash:
In a food processor or mixing bowl, combine beans, roasted garlic, 2 Tbsp olive oil, warm stock, butter (if using), and lemon juice. Blend or mash until smooth and creamy. Add more stock if needed for a softer texture. - Season:
Taste and adjust with salt, pepper, and a little more lemon juice if desired. - Serve:
Transfer to a serving dish and garnish with fresh herbs. Drizzle with a touch more olive oil before serving.
