A creamy, protein-rich alternative to traditional mashed potatoes, featuring Doudlah Farms Great Northern beans blended with roasted garlic and olive oil. Smooth, savory, and nutrient-packed, this side dish brings both comfort and a wholesome twist to your holiday table.


Ingredients

  • 2 cups cooked Doudlah Farms Great Northern beans (or 1 cup dried beans, soaked overnight and cooked until tender)
  • 1 small head of garlic
  • 3 Tbsp extra virgin olive oil, divided
  • ½ cup vegetable or chicken stock (warm)
  • 2 Tbsp unsalted butter (optional, for extra richness)
  • Juice of ½ lemon
  • Salt and freshly ground black pepper, to taste
  • Fresh herbs (parsley, thyme, or chives) for garnish

Instructions

  1. Cook the Beans (if using dried):
    If starting with dried Doudlah Farms beans, rinse and soak overnight. Drain, then simmer in fresh water until tender (about 1 to 1½ hours). Drain and set aside.
  2. Roast the Garlic:
    Preheat oven to 400°F. Slice the top off the garlic head, drizzle with 1 Tbsp olive oil, wrap in foil, and roast for 30–35 minutes until soft and caramelized. Let cool slightly, then squeeze out the cloves.
  3. Blend the Mash:
    In a food processor or mixing bowl, combine beans, roasted garlic, 2 Tbsp olive oil, warm stock, butter (if using), and lemon juice. Blend or mash until smooth and creamy. Add more stock if needed for a softer texture.
  4. Season:
    Taste and adjust with salt, pepper, and a little more lemon juice if desired.
  5. Serve:
    Transfer to a serving dish and garnish with fresh herbs. Drizzle with a touch more olive oil before serving.
