Classic Pinto Bean Sloppy Joes

A wholesome, family-friendly twist on the classic Sloppy Joe — made with Doudlah Farms pinto beans for a hearty, plant-powered meal kids and adults will love.


Ingredients

  • 3 cups Doudlah Farms dried pinto beans (cooked and drained)
  • 1 tablespoons olive oil
  • 1 pieces yellow onion, finely diced
  • 2 pieces garlic cloves, minced
  • 1 pieces red bell pepper, finely diced
  • 1 cups tomato sauce
  • 3 tablespoons ketchup
  • 1 tablespoons yellow mustard
  • 1 tablespoons brown sugar
  • 1 teaspoons Worcestershire sauce
  • 1 teaspoons chili powder
  • 0.5 teaspoons salt
  • 0.3 teaspoons black pepper
  • 6 pieces hamburger buns

Instructions

  1. Cook the pinto beans: If using Doudlah Farms dried pinto beans, soak 3 cups Doudlah Farms dried pinto beans (cooked and drained) overnight and cook until tender, about 1–1.5 hours. Drain and set aside. (You can also use pre-cooked beans to save time.)
  2. Sauté the veggies: Heat 1 tablespoons olive oil in a large skillet over medium heat. Add 1 pieces yellow onion, finely diced, 2 pieces garlic cloves, minced, and 1 pieces red bell pepper, finely diced. Cook, stirring occasionally, until softened, about 5 minutes.
  3. Mash the beans: Add the cooked pinto beans to the skillet. Using a potato masher or the back of a fork, mash about half the beans, leaving some whole for texture.
  4. Build the sauce: Stir in 1 cups tomato sauce, 3 tablespoons ketchup, 1 tablespoons yellow mustard, 1 tablespoons brown sugar, 1 teaspoons Worcestershire sauce, 1 teaspoons chili powder, 0.5 teaspoons salt, and 0.3 teaspoons black pepper. Mix everything together until well combined.
  5. Simmer: Reduce heat to medium-low and let the mixture simmer, stirring occasionally, until thickened and saucy, about 10–12 minutes.
  6. Serve: Spoon the Sloppy Joe mixture generously onto 6 pieces hamburger buns. Serve warm and enjoy!

Notes

Tips for families: This recipe is a great way to sneak extra protein and fiber into kids’ meals! For picky eaters, mash the beans more thoroughly so the texture is smoother.
