Holiday Baking: Whole Wheat Dinner Rolls

Description

Soft, golden, and wholesome, these Doudlah Farms whole wheat flour dinner rolls are a holiday must-have. With their nutty flavor and tender crumb, they’re perfect for the dinner table, for soaking up gravy, or for enjoying warm with a pat of butter.


Ingredients

  • 3 cups Doudlah Farms whole wheat flour
  • 2 cups all-purpose flour (for lighter texture)
  • 2¼ tsp active dry yeast (1 packet)
  • 1½ cups warm milk (about 110°F)
  • ¼ cup honey or maple syrup
  • 4 Tbsp unsalted butter, melted (plus extra for brushing)
  • 2 tsp salt
  • 1 egg (for egg wash, optional)

Instructions

  1. Activate the Yeast:
    In a large bowl, combine warm milk and honey. Sprinkle yeast over the top and let sit for 5–10 minutes until foamy. 
  2. Make the Dough:
    Stir in melted butter and salt. Add Doudlah Farms whole wheat flour and all-purpose flour, one cup at a time, until a soft dough forms. 
  3. Knead:
    Turn dough onto a floured surface and knead for 8–10 minutes until smooth and elastic. (Or use a stand mixer with a dough hook for 5–6 minutes.) 
  4. First Rise:
    Place dough in a greased bowl, cover, and let rise in a warm place for 1–1½ hours, or until doubled in size. 
  5. Shape the Rolls:
    Punch down the dough and divide into 16–20 equal portions. Shape into balls and place on a greased baking sheet or in a buttered 9×13 pan. 
  6. Second Rise:
    Cover loosely with a towel and let rolls rise for another 30–40 minutes, until puffy. 
  7. Bake:
    Preheat oven to 375°F. Brush rolls with an egg wash or melted butter, then bake for 18–22 minutes, until golden brown on top. 
  8. Serve:
    Brush with extra melted butter right out of the oven. Serve warm.
