BEYOND ORGANIC: Our Cannulah™ beans — also known as Cassoulet beans or Classic Flat Whites™ — are a favorite of French cooks and now a staple on American tables. Large, dense, and deeply flavorful, these beans hold their shape through long, slow braises while soaking up every bit of flavor in the pot. This is the first polyculture product of Doudlah, meaning these beans grow on the stems of sunflowers as living trellises.

COOKING TIPS: These are large, dense beans — plan ahead. Soak beans 4-6 hours. On the stovetop, bring to a boil at a simmer 2–3 hours. In a pressure cooker, cook on high for 42 minutes with a 15-minute natural release. Always add salt to your cooking water — it helps the beans soften and absorb flavor.
